Gluten Free Fennel And Sausage Pasta


When we were kids, our mum would always cook with fennel during winter. Whether it was in a pasta dish or hidden in amongst a salad, my sisters and I were not fans of the strong liquorice/aniseed like taste.

Being a very common Mediterranean dish, fennel is one of Italy's most popular vegetable. The seeds are commonly used in Italian sausages, which my sisters and I would pick out each time we ate them! But as my taste buds matured, I didn’t mind the flavour.

Now that I know the health benefits of fennel, I understand why our mum fed this to us growing up. Fennel is packed with nutrients. It's a good source of fibre, vitamin C, folate, niacin and potassium. One cup contains almost 20 percent of your recommended daily value of vitamin C – which is why you should stock your fridges with fennel this winter!

The entire fennel vegetable can be eaten, including the bulb, stalk and leaves. Fennel seeds don’t actually come from the bulb but instead from the wild fennel variety. The vegetable can be eaten raw, braised, sautéed, roasted, or grilled. When choosing fresh fennel, look for firm, greenish-white fennel bulbs with no soft or brown spots. The leaves should be bright green with no signs of wilting.

One of my favourite ways to eat fennel is finely sliced, mixed with orange segments, and combined with a lemon vinaigrette, or mixed through creamy, soft polenta. But if you are after a more hearty winter meal, try our ‘Fennel and Sausage Pasta’ recipe below. Buon appetito!


{Gluten Free Recipe} FENNEL AND SAUSAGE PASTA

400g gluten free pasta (we used Rigatoni)
1 tablespoons olive oil
4 Italian pork sausages (hot or mild depending on taste)
1/2 medium brown onion, finely diced
2 medium fennels, thinly sliced (whole including the leaves)
2 tablespoons tomato paste
2 tablespoons pecorino* cheese, grated
Salt to taste

1. Split open the sausages, discard the casings and roughly chop the meat.
 
2. Cook the pasta in a saucepan of salted boiling water, following packet directions, until tender. Drain pasta, keeping approximately 1 cup of the water (this may not all be used). Set both aside until required.

3. Meanwhile, heat the olive oil in a frypan over medium-low heat and fry the sausages until meat is browned. Add the onion and fennel and cook until the onion starts to soften. Season with salt (remember the sausages may already be salty, so be careful and don’t over salt). Stir through the tomato paste.
 

4. At this stage the mixture will be quite dry. Add the reserved pasta water, a little at a time to the frypan and simmer, allowing the mixture to cook further until the sauce is thick.

5. Add the drained pasta to the frypan, along with the pecorino cheese, and toss until the sauce coats the pasta. Turn off heat and serve hot. Serves 4
.

*Pecorino is a strong flavoured, salty sheep’s milk cheese. This is often found grated and can be used as a substitute to Parmesan cheese. Pecorino is available at good Italian delicatessens.

Gluten Free Lemon Yoghurt Cake


Winter is definitely here, there’s no escaping the cold chill in the air. So it’s a good idea to start boosting your immune system to avoid the nasty cold & flu season!

Make lemons your best friend this winter because they are an excellent source of vitamin C, high in antioxidants and help fight against infections.

There are so many ways to use the humble lemon but during winter we like to use it in tea.  Brew green tea with ginger, lemon wedges, pomegranate seeds, and honey. Let tea steep for 3 to 5 minutes before drinking.

We also love baking with lemons and the cake below is delicious! Enjoy it with a nice warm cup of tea, while you are rugged up on your lounge this winter. Keep warm and enjoy!

{Gluten Free Recipe} LEMON YOGHURT CAKE
 
2 eggs
3/4 cup vegetable oil
1 cup caster sugar
4 teaspoons of lemon juice
Grated rind of 2 lemons
2 cups gluten free self raising flour, sifted
1 teaspoon xanthan gum
1/2 teaspoon salt
1 cup natural yoghurt 


1.  Preheat oven to 180◦c. Butter a round cake tin and set aside.

2. In a bowl mix the eggs, oil, caster sugar, lemon juice and rind with a fork.

3. In a separate bowl, add the gluten free self raising flour, xanthan gum, salt and yoghurt. Add the egg mixture and mix well to combine.

4. Pour into the prepared cake tin and bake for 40 mins.

Handy lemon hints: Choose plump, bright lemons that are heavy for their size. To get more juice out of your lemon, roll it on the bench before cutting and squeezing.

Quinoa... the superfood


Quinoa (pronounced 'keen wah') is an indigenous plant of South America that has a crunchy texture, mild nutty flavour, is a great source of protein and most importantly, gluten free. It provides more amino acids, enzymes, vitamins, minerals, fibre and antioxidants than most other grains, which is why it’s often referred to as a super food.

To tell you the truth, I didn’t really like quinoa when I first tried it as porridge a few years ago and have turned my nose up to it since!

My naturopath has been encouraging me to try cooking with quinoa because of all the health benefits, so I decided to give it a second chance and gave quinoa patties a go!

One good tip I did come across, was to always rinse the quinoa before cooking, this helps get rid of the earthy taste.

The recipe below is really versatile and can be adapted to any flavour combo you like, so you can enjoy them for breakfast, lunch or dinner!

 
{Gluten Free Recipe} ZUCCHINI, GOATS FETTA AND QUINOA PATTIES

3 cups cooked quinoa*
1/2 medium onion, finely chopped
2 cloves garlic, finely chopped
1 medium zucchini, cut finely
4 large eggs, lightly beaten
1/2 cup grated parmesan
1/3 cup chopped parsley
1 cup gluten free bread crumbs
100g goats fetta, crumbled
1 tablespoon water
Salt and pepper to taste
2 tablespoon olive oil

1. In a frying pan, add 1 tablespoon of olive oil and heat. Add the onion, garlic and zucchini and sauté for a few minutes, until the onion is translucent. Remove from heat and cool.

2. Combine the cooled onion, garlic, zucchini mixture to the quinoa, parmesan cheese, parsley, gluten free bread crumbs, salt and pepper. Add beaten eggs and stir until all of the quinoa mixture is moistened. Add water to thoroughly moisten mixture. Quinoa should be slightly wet so it doesn’t dry out during cooking.

3. Gently stir in the goats fetta.


4. Form 2 tablespoons of the mixture into a patty, using moist fingers to prevent sticking.

5. In a large frying pan heat olive oil, over medium heat. Add patties to the hot pan and cook on each side until browned, about 4 to 5 minutes on each side.

6. Serve warm with scrambled eggs for breakfast or with a leafy salad for lunch or dinner.

Makes approx 20 patties, depending on size.

Note: The quinoa mixture can be left, uncooked in the fridge for a few days.

* To cook the quinoa, place 1 1/2 cups dry quinoa in a fine mesh strainer and rinse under cool water for a few minutes (this removes the “earthy” taste). Add rinsed quinoa, 3 cups water and 1/2 teaspoon salt in a medium saucepan. Bring to boil, then reduce heat and simmer for 25 – 30 minutes, until the quinoa is tender. Remove from heat and allow to cool to room temperature.

It’s our 1st Birthday… Hip Hip Hooray!


Guess what today is? It’s our birthday! ‘Two Silly Sisters’ turns ONE! Yayyyyyyy! Exactly one year ago today we posted our very first blog, ‘Step away from the crunchy bread’. I remember how excited we both were… we had so many stories and recipes to share and couldn’t wait to get started. It was our dream to build a gluten free community – to share and learn from each other.

We have learnt a lot in the last year. Yes there have been many disasters in the kitchen, but there have been even more successes! We have enjoyed every minute of sharing our gluten free experiences with you, our readers. And lets face it, without you we wouldn’t have a blog, so thank you for following us on our gluten free journey!

We love getting comments, emails, and posts on our facebook wall. So please keep them coming! As a blogger, one of the most gratifying things is knowing that you are reaching out to people and helping them. Wether it’s a new recipe or advice on gluten free living. {Gluten Free Recipe} LEMON CUPCAKES WITH MERINGUE FROSTING
 
LEMON CUPCAKES
150g butter, at room temperature
150g caster sugar
1 tsp vanilla essence
1 tsp lemon juice
2 eggs, lightly beaten
200g gluten free self-raising flour
2 tsp gluten free baking powder
3/4 cup sour cream
1 tsp grated lemon rind

MERINGUE FROSTING
3 egg whites
1/2 cup caster sugar

1. Preheat oven to 180°C and line a 12-hole muffin tin with patty cases.

2. Beat the butter, caster sugar, vanilla essence and lemon juice with electric beaters until pale and creamy. Add the eggs, one at a time, beating in between.


3. Sift the flour and fold into the butter mixture. Add baking powder.

4. Fold the sour cream into the mixture, 1/4 cup at a time. Stir in the lemon rind.

5. Spoon the mixture evenly into the patty cases. Bake for 20-25 minutes until lightly browned and a skewer inserted into the centre comes out clean. Cool completely on a wire rack.

6. For the meringue frosting beat egg whites with an electric mixer until firm peaks form. Gradually add sugar, a tablespoon at a time, beating until sugar has dissolved between each addition.

7. Preheat grill to medium-high. Spoon meringue mixture into a piping bag.

8. Pipe a swirl of meringue on the top of each cupcake and place under heated grill for 60-90 seconds or until golden.

Makes 12 cupcakes.

Gluten Free Hot Cross Muffins


Wow, how can it be Easter already? The past few months have just flown by!

Apart from all the chocolate eggs you see at this time of the year, the next big giveaway that it’s Easter time is the hot cross buns.

Our very first attempt of making hot cross buns last year was disastrous. The dough was not easy to work with (very sticky to knead) and when cooked, they turned into rock cakes. I only wish I had photos to show you how messy they were!

This year I was determined not to miss out on eating a hot cross bun again, so I cheated a little and turned them into muffins instead. No kneading or mess, just spooned straight into a muffin tin.

So get into the Easter spirit and try our Gluten Free Hot Cross Muffins. See recipe below.

{Gluten Free Recipe} GLUTEN FREE HOT CROSS MUFFINS

MUFFIN MIX
2 cups gluten free self-raising flour
1/2 cup potato flour
1/2 tsp bicarbonate of soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
2/3 cup sunflower oil
1 cup buttermilk
2 eggs
200g caster sugar
1 cup dark or milk choc chips
1/3 cup white choc chips

GLAZE
2 tbs caster sugar
2 tbs water

ICING
80g icing sugar
1 tsp lemon juice
Hot water
 
1. Preheat oven to 200°C. Line a 12-hole muffin tray with paper cases.
 
2. Sift the flours, soda and spices into a large bowl. In a separate bowl, whisk together the oil, buttermilk, eggs and sugar until combined. Add to the dry ingredients and stir to combine. Gently stir in the chocolate.
 
3. Divide the mixture among muffin cases, then bake for 20-25 minutes until lightly browned and a skewer inserted into the centre comes out clean. Cool completely on a wire rack.
 

4. For the glaze, place the sugar in a pan with the water and simmer over low heat, stirring, until sugar dissolves. Brush the glaze over the muffins.
 
5. For the icing, sift icing sugar into a bowl. Add lemon juice and just enough hot water to make a thick, pipable icing. Use a piping bag or drizzle from a spoon to draw a cross on each muffin.  Alternatively use pre-made royal icing.

Makes 12 muffins.
